Orange Cake

100 Cookies

1 cup white sugar
1 cup brown sugar
1 cup margarine  (softened)
1 cup oil
1 egg
1 cup rice krispies
1 teaspoon vanilla
1 cup flaked coconut
1 cup quick oats
3/4 tsp. salt
1 tsp. soda
3 1/2 cups plain flour
1 tsp. cream of tartar
1 cup pecan's chopped fine

In large mixing bowl, mix white sugar, brown sugar, oil, margarine, beaten eggs, vanilla, cereal, coconut, oats.  Sift together salt, flour, soda and cream of tartar; add to other mixture and mix well.  Drop by teaspoon onto greased sheet, bake 10 to 12 minutes at 350 degrees.

Cheese Logs

8 oz. cream cheese
1 lb. Velveeta cheese
1 tsp. garlic powder
2 cups chopped walnuts
20 oz. sharp cheddar cheese

Grate Cheddar cheese, cut up Velveeta and Cream Cheese.  Let the cheeses come to room temperature.  Use wooden spoon or work by hand until well mixed with walnuts and garlic.  Form into balls or logs and chill until firm.  roll in a mixture of 1 tablespoon chili powder and 2 tablespoons paprika.  Keep refrigerated. 

Strawberry Salad

2 cups of pretzels, broken small
3/4 cup of butter
3 Tbsp. sugar

Put in 9 x13 inch pan. Bake for 8 minutes a 400 degrees.

1 cup sugar
2 cup Cool Whip
2 cup boiling water
8 oz of cream cheese
6 oz pkg. strawberry jello
2 (10 oz.) frozen strawberries

Whip cream cheese and sugar into Cool Whip.  Spread over crust after it is cool.  Mix jello and water.  Add frozen berries.  Let cool.  Pour over 2nd layer and refrigerate.

Taco Soup

1 lb. ground beef
1 lg. onion chopped
3 (15 1/2 oz.) cans Mexican -style chili beans, undrained
1 (15 1/2 can whole kernal corn, undrained
1 (15 oz.) can tomato sauce
1 (14 1/2 oz can diced tomatoes, undrained
1(4.5 oz) can chopped green chiles
1 (1 1/4 oz.)  Package of taco seasoning mix
1 (1 oz.)  Package of Ranch style dressing mix
1 1/2 cup of water

Cook beef and onions in over medium heat until done.  Drain.  Stir beans, corn, tomato sauce, diced tomatoes, chopped green chile's, taco seasoning mix, Ranch-style mix and water into the beef and bring to a boil.  Reduce heat and simmer for 15 minutes.
Toppings:

corn chips
shredded lettuce
chopped tomato
sour cream
cheddar cheese

Wet Cake

1 box butter cake mix

On the stove bring the following to a boil:
1 can evaporated milk
1 stick butter
2 cups sugar
1 tsp vanilla

Punch holes in cake and pour mixture over cake.  Let cool.

How you get a 4 year old to eat Squash -Squash Casserole!

1 1/2 Cup cooked squash
1/2 cup grated cheese
1/2 stick butter
1/4 tsp. celery salt (optional)
1/4 cup chopped onion
1 egg
1 cup of cracker crumbs ( Ritz crackers place in a bag and crush and add melted butter)
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup evaporated milk

Cut squash into slices and boil until tender and drain.  In a separate pan saute butter and chopped onion.  When done add salt, pepper, celery salt and onion with butter to squash and mix well.  Add beaten eggs, onion, cheese, and cracker crumbs.  Pour into a greased casserole dish and top with more Ritz crackers. Bake on 375 degrees for about 20 to 30 minutes.

Mark's Favorite Orange Balls

1 pound vanilla wafers crushed
1 stick margarine melted
1 box confectioners sugar
1 cup finely chopped nuts ( optional)
1 6 oz can frozen orange juice
1 package of  coconut

Mix all ingredients together except coconut.  Shape mixture into balls and roll in coconut.  Makes 50 to 60 balls.

Aloha! Hawaiian Cake

1 white cake mix
1 lg. can crushed pineapple
1 cup sugar
2 boxes of instant pineapple or vanilla pudding
3 1/2 cups of milk
Cool whip
Coconut
Nuts

Bake cake according to directions.  Cool.  Mix pineapple and sugar.  Boil for 10 minutes.  Punch holes in cake and pour pineapple mixture over the cake.  Let cool.  Mix pudding with milk  Pour over cake and let sit.  Top with Cool Whip.  Sprinkle coconut over Cool Whip and top with nuts.

Butterfinger Cake

1 box Duncan Hines chocolate cake mix
1 jar of Carmel sundae topping
1 small Cool whip
1 King size Butterfinger bar

Bake cake according to directions.  When done poke holes with fork and pour Carmel over top evenly.  Let cool.  Spread Cool Whip on top.  Break  up Butterfinger Bar  and sprinkle on top.

Easy Hamburger Casserole

1 lb. ground beef
1 (16 oz) pkg. elbow macaroni
1 can Ro-Tel
1 can of cream of mushroom
1 small onion
1 pkg. of shredded cheese

Brown ground beef and and drain.  In a separate pan saute onion with the butter.  Boil macaroni.  Combine ground beef, sauteed onions and butter, Ro-Tel, cream of mushroom, macaroni.  Place in a medium casserole dish and spread cheese on top.  Bake for 30 minutes at 350 degrees.

The best snack ever! New Orleans Pecan Pralines

1 1//2 cup of pecan halves
1 cup of dark brown sugar
1 cup of sugar
1/3 stick of butter
1/3 cup of milk
1 tsp. vanilla extract

Combine pecan halves, sugars and butter in saucepan.  Bring milk to a boil; pour over pecan mixture.  Place over medium heat; cook for 7 minutes, stirring occasionally.  Remove from heat; add vanilla.  Beat for 30 seconds.  Drop by tablespoons onto wax paper.

Unbaked Chocolate Oatmeal Cookies

2 cups of sugar
4 tablespoons cocoa
Mix sugar and cocoa together.
Add:
1/2 cup milk ( I like to use evaporated milk)
1/2 cup margarine (1 stick)
1 teaspoon vanilla

Bring the above to a boil.  Cook 3 minutes stirring constantly.  Remove and add 2 1/2 cups of uncooked quick oatmeal and 1/2 cup of peanut butter. Drop by teaspoons onto wax paper.

Tired of the same old spagetti? Try this recipe for Chicken Spaghetti

4 boneless chicken breast
1 package of  spaghetti  noodles ( I like using the angel hair noodles)
1 can of mushroom soup
1 package of Velveeta cheese ( I like to used the Colby and  Monterey cheese from great value it comes in a large size and is available at Walmart.


Boil chicken until done.  Pull apart into strips.  Put spaghetti in the chicken broth and cook until tender. 
Poor mushroom soup over chicken.  Drain spaghetti noodles and mix noodles with chicken mixture.  Mix in cheese.  Also layer the top with cheese.  Cook at 400 degrees until cheese is melted.  Be sure to put aluminum foil on top to keep the cheese from burning.
